In the province of Seville (Spain) there is a region called Aljarafe, which is famous in the entire world because of the green olive table.
All the process starts at the end of the Summer where the fruit adquires an intensive green colour, which suggest that the olives are ready to be collected. Where the farmers beging to collect the olives by hands, as they have been doing for centuries. Then, the olives are transported to the factory.
Among its multiple presentations one of the most important or famous is mixed with the drink "Martini"
